Zucchini Noodles with Pesto and Cherry Tomatoes

Zucchini Noodles with Pesto and Cherry Tomatoes

Ingredients (2 servings):

  • 2 medium zucchinis (spiralized into noodles)

  • 1 cup cherry tomatoes, halved

  • 2 tbsp olive oil

  • 2 tbsp homemade or store-bought pesto

  • 1 garlic clove, minced

  • 2 tbsp grated Parmesan (optional)

  • Salt and black pepper, to taste

  • Fresh basil leaves (for garnish)


Instructions:

  1. Prepare the zucchini noodles: Use a spiralizer or vegetable peeler to create zucchini noodles (zoodles).

  2. Sauté briefly: Heat olive oil in a skillet, add garlic, and cook for 30 seconds. Add zucchini noodles and cherry tomatoes, and sauté for 2-3 minutes until slightly tender.

  3. Add pesto: Stir in pesto, coating the zoodles and tomatoes evenly.

  4. Season and serve: Add salt and pepper to taste. Garnish with Parmesan and fresh basil. Serve immediately.
