2 medium zucchinis (spiralized into noodles)
1 cup cherry tomatoes, halved
2 tbsp olive oil
2 tbsp homemade or store-bought pesto
1 garlic clove, minced
2 tbsp grated Parmesan (optional)
Salt and black pepper, to taste
Fresh basil leaves (for garnish)
Prepare the zucchini noodles: Use a spiralizer or vegetable peeler to create zucchini noodles (zoodles).
Sauté briefly: Heat olive oil in a skillet, add garlic, and cook for 30 seconds. Add zucchini noodles and cherry tomatoes, and sauté for 2-3 minutes until slightly tender.
Add pesto: Stir in pesto, coating the zoodles and tomatoes evenly.
Season and serve: Add salt and pepper to taste. Garnish with Parmesan and fresh basil. Serve immediately.
