Ingredients (1 serving):

  • 1 slice whole-grain bread (toasted)

  • ½ ripe avocado

  • 4-5 cherry tomatoes, halved

  • A handful of fresh spinach or arugula

  • 1 tsp extra virgin olive oil (optional)

  • 1 tsp lemon juice

  • A pinch of salt and black pepper

  • A sprinkle of chia seeds or sesame seeds


Instructions:

  1. Toast the bread until golden and crispy.

  2. Mash the avocado in a small bowl with lemon juice, salt, and black pepper to enhance flavor.

  3. Spread the avocado mixture evenly on the toast.
